Fresh No Bake Strawberry Blueberry Pie

With summer almost upon us, berry season appears to be full swing. I couldn’t resist the siren call of fresh blueberries and strawberries last weekend…their sweetness beckoning to me with the promise of fruity goodness was just too powerful to walk away from. Armed with a couple of pints of each, I came home and couldn’t help but to marvel at the beautiful contrast between the blues and the reds. I thought to myself, isn’t there something where I could use both and play off of that lovely contrast of colors?

You bet! I decided to tweak my no bake strawberry pie to accommodate some blueberries and indulge my chromatic whim. I’m pleased to say that the end result was just as fantastic and lovely as I had hoped.

The no bake was a perfect showcasing for the freshness of the berries and the blues contrasted beautifully with the strawberries. I opted to keep the strawberries whole here to make for a more uniform presentation and providing the blueberries plenty of room to fill in any nooks and crannies with their sweetness. Served with a dollop of whipped cream, it’s the perfect ending to a great dinner and a wonderful reminder that summer is practically here.

Fresh Strawberry Blueberry Pie

Ingredients

1 baked and ready-to-fill shortbread crust pie shell
1 cup sugar
2 tablespoons corn starch
1 cup boiling water
1 teaspoon vanilla extract
1 3oz package strawberry flavored gelatin
1 quart fresh strawberries, hulled
1 pint fresh blueberries

Preparation

Place sugar and cornstarch in small saucepan and whisk until thoroughly combined. Add boiling water and vanilla extract. Whisk the mixture over medium heat until it thickens and the sugar dissolves. Remove from heat and add the gelatin, whisking until smooth. Cool mixture to room temperature.

Slice tops of strawberries so that they are flat on top, but still whole. Arrange strawberries in baked pie shell, flat tops down on crust in adjacent circles. Pour blueberries into shell and arrange around strawberries. Make sure to leave the tips of the strawberries poking through so that they are visible! Pour the cooled gelatin filling over the berries. Refrigerate for 2 hours or until completely set. Serve topped with a dollop of fresh whipped cream!

Can be stored, covered in the refrigerator up to 3 days.
